Ingredients

• 2 medjool dates, pitted

• 2 teaspoons peanut butter (shallow, smooth or crunchy)

• 2 squares of dark chocolate (70% or above)

Steps

  1. Fill the dates: slice each date open lengthways and remove the stone if not already pitted.
  2. Spoon: spoon as much as 1 teaspoon of peanut butter as fits comfortably inside each date.
  3. Add the chocolate: break 1 square of dark chocolate (70% or above) into two pieces and press one piece on top of each filled date.
  4. Chill: place on a small plate or tray and refrigerate for at least 15 minutes until the chocolate firms up slightly against the peanut butter.
  5. Serve: eat straight from the fridge. the contrast between the cold chocolate, creamy peanut butter and soft date is the whole point.
