boops golden granola
Warmly spiced, naturally sweetened, and made to last all week. the kind of breakfast that actually sets you up.
1. Preheat the oven: preheat your oven to 160°C fan. line a large baking tray with parchment paper.
2. Mix the wet ingredients: gently melt 7 tablespoons coconut oil in a small saucepan or microwave. combine with 150 milliliters maple syrup, the juice and zest of 1 large orange, zested and juiced, and 5 teaspoons ground cinnamon. stir until combined.
3. Combine: in a large bowl, mix together 400 grams jumbo oats, 70 grams sunflower seeds, 50 grams pumpkin seeds, and 50 grams flaked almonds. pour the wet mixture over the dry ingredients and stir well until everything is evenly coated.
4. Bake: spread the mixture evenly across your lined baking tray. bake for 35 to 40 minutes, stirring every 15 minutes to ensure even browning. you want it golden but not dark.
5. Add the raisins: remove from the oven and stir in 100 grams raisins while still warm. leave to cool completely on the tray — it will crisp up as it cools.
6. Store: transfer to an airtight jar or container. keeps for up to two weeks at room temperature.
Oats are one of the best sources of beta glucan, a soluble fibre that supports gut health and helps regulate blood sugar and cholesterol. seeds and almonds provide healthy fats, protein, zinc and magnesium. maple syrup offers a lower glycaemic sweetness than refined sugar. the orange adds vitamin C which supports collagen production and iron absorption. cinnamon has been shown to support blood sugar regulation.
