# boops Nigerian-inspired grilled tilapia

A lighter, wholefood take on Nigerian grilled tilapia. still smoky, peppery and full of flavour, but built from fresh herbs, citrus, garlic and warming spices.

Ingredients 

• 1 whole tilapia, cleaned and scaled

• 1 tablespoons olive oil or avocado oil

• 0.5 teaspoons sea salt

• 0.5 teaspoons black pepper

• 0.5 lemon or orange, sliced for stuffing

• 1 fresh parsley or coriander, small handful

• 3 garlic cloves

• 0.5 red bell pepper

• 0.5 small red onion

• 1 scotch bonnet or habanero pepper

• 1 tablespoons olive oil or avocado oil (marinade)

• 1 teaspoons smoked paprika

• 0.5 teaspoons ground ginger

• 0.5 teaspoons dried thyme

• 0.5 teaspoons curry powder

• 0.5 lemon or orange, zested and juiced

• 1 teaspoons tomato purée (optional)

### Steps

1. **Prepare the fish: preheat your oven to 200°C.** Pat 1 whole tilapia, cleaned and scaled dry with kitchen paper.
2. **Using a sharp knife, make 3 to 4 deep diagonal cuts on each side of the fish**. This helps the marinade sink into the flesh and allows it to cook evenly. lightly season the fish with 0.5 teaspoons sea salt and 0.5 teaspoons black pepper, including inside the cavity.
3. **Make the marinade:** add 3 garlic cloves, 0.5 red bell pepper, 0.5 small red onion, 1 scotch bonnet or habanero pepper, 1 tablespoons olive oil or avocado oil (marinade), 1 teaspoons smoked paprika, 0.5 teaspoons ground ginger, 0.5 teaspoons dried thyme, 0.5 teaspoons curry powder, the zest and juice of 0.5 lemon or orange, zested and juiced, a small handful of fresh herbs, 1 teaspoons tomato purée (optional) and a pinch of 0.5 teaspoons sea salt to a blender or food processor.
4. **Blend until you have a thick, smooth marinade.** Taste and adjust — a little more citrus for brightness, a little more pepper for heat.
5. **Marinate: rub the marinade all over the fish, pushing it into the cuts, inside the belly and across the skin.** stuff the cavity with slices of 0.5 lemon or orange, sliced for stuffing and fresh herbs. place on a lined baking tray and leave to marinate for at least 30 minutes. for deeper flavour, cover and refrigerate for 2 to 4 hours.
6. **Bake: bake at 200°C for 20 to 25 minutes depending on the size of the fish.** it is ready when the flesh is opaque, tender and flakes easily with a fork.
7. **Grill for colour:** for a charred, street food finish, switch the oven to grill for the final 5 to 10 minutes. keep an eye on it so the marinade caramelises without burning.
8. . **Serve:** serve warm with roasted plantain, a fresh cucumber and tomato salad, herby yoghurt or a simple pepper sauce. finish with a squeeze of lemon or orange and a little extra fresh parsley or coriander.

#### Why this works 

Tilapia is a lean, high-quality protein source rich in omega-3 fatty acids, vitamin B12 and selenium, all nutrients that support hormone production, brain health and thyroid function. Garlic contains allicin, a compound with anti-inflammatory and antimicrobial properties. Scotch bonnet peppers are exceptionally high in vitamin C. Smoked paprika and turmeric add antioxidant compounds that support the body's inflammatory response.

This recipe keeps the bold, peppery flavour of Nigerian grilled tilapia but builds it entirely from fresh ingredients. it is a lighter alternative to seasoning cube heavy marinades while still feeling rich, smoky and deeply satisfying.
